Description

This Amazing Forgotten Chicken is the ultimate no-fuss, one-pan dinner! Made with tender chicken, creamy soup, and flavorful onion soup mix, it’s a comforting casserole that practically takes care of itself – just set it and forget it!


Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup long grain white rice, uncooked

  • 1 packet dry onion soup mix

  • 1 1/2 cups water

  • Optional: 1/2 cup cream of mushroom soup for extra richness

  • Optional garnish: chopped parsley or green onions


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

  2. In the baking dish, combine the uncooked rice, cream of chicken soup, and water. Stir until well mixed.

  3. Place the chicken breasts on top of the rice mixture.

  4. Sprinkle the dry onion soup mix evenly over the chicken.

  5. Cover the dish tightly with aluminum foil.

  6. Bake for 1 hour and 15 minutes, or until the chicken is cooked through and the rice is tender.

  7. Remove from oven and let sit for 5 minutes before serving. Garnish if desired.
