Ingredients
-
4 boneless, skinless chicken breasts
-
1 can (10.5 oz) cream of chicken soup
-
1 cup long grain white rice, uncooked
-
1 packet dry onion soup mix
-
1 1/2 cups water
-
Optional: 1/2 cup cream of mushroom soup for extra richness
-
Optional garnish: chopped parsley or green onions
Instructions
-
Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
-
In the baking dish, combine the uncooked rice, cream of chicken soup, and water. Stir until well mixed.
-
Place the chicken breasts on top of the rice mixture.
-
Sprinkle the dry onion soup mix evenly over the chicken.
-
Cover the dish tightly with aluminum foil.
-
Bake for 1 hour and 15 minutes, or until the chicken is cooked through and the rice is tender.
-
Remove from oven and let sit for 5 minutes before serving. Garnish if desired.
Notes
-
Don’t peek while it bakes – keeping it covered ensures moist chicken and perfectly cooked rice.
-
Try adding vegetables like chopped bell peppers or frozen peas before baking for a full one-dish meal.
-
