Ingredients
For the Sandwich:
- 8 slices thick-cut bacon
- 4 tablespoons mayonnaise
- 3 tablespoons grated Parmesan cheese (optional, for extra crispiness)
- 4 thick slices sourdough bread
- 8 ounces sharp cheddar cheese, shredded
- 4 ounces Monterey Jack or pepper jack cheese, shredded
Instructions
1️⃣ Cook the Bacon:
Arrange bacon in a cold skillet and heat to medium.
Cook until crispy, then transfer to a paper towel-lined plate.
Wipe the skillet clean and reduce heat to medium-low.
2️⃣ Prep the Bread:
In a small bowl, mix mayonnaise and Parmesan cheese (if using).
Spread half the mixture evenly over one side of each bread slice.
3️⃣ Toast the Bread:
Place mayo-side down in the skillet. Cook for 2-3 minutes until lightly golden.
Spread the remaining mayo mix on the tops, then flip the bread.
4️⃣ Add the Cheese & Bacon:
Top each slice with cheddar and Monterey Jack cheese.
Cover the skillet with a lid and cook for 3-5 minutes until the cheese is melty.
Remove from heat and layer the crispy bacon between slices.
5️⃣ Assemble & Serve:
Press the sandwiches together, let them rest for 1-2 minutes, then slice and enjoy!
