Ingredients

  • 250g all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 2 large eggs

  • 180ml milk

  • 60ml vegetable oil or melted butter

  • 1 cup shredded cheese (cheddar or a mix)

  • 3/4 cup diced cooked ham

  • Fresh herbs (optional, for topping)


Instructions

  • Preheat oven: Preheat your oven to 375°F (190°C). Line or grease a 12-cup muffin tin.

  • Mix dry ingredients: In a large bowl, whisk together flour, baking powder, salt, and pepper.

  • Mix wet ingredients: In another bowl, beat eggs with milk and oil (or melted butter).

  • Combine: Pour wet ingredients into the dry ingredients. Stir until just combined—do not overmix.

  • Fold in fillings: Gently fold in shredded cheese and diced ham.

  • Fill muffin tin: Divide batter evenly among muffin cups. Top with fresh herbs if using.

  • Bake: Bake for 18–22 minutes, or until golden and a toothpick comes out clean.

  • Cool and serve: Let cool slightly in the pan before transferring to a wire rack.
