Ingredients

1 pound lean ground beef

4-6 medium Russet potatoes, peeled and cubed

1 packet (1 ounce) taco seasoning

1/2 cup water

1 1/2 cups shredded cheddar cheese (or your favorite melting cheese)

2 tablespoons olive oil (for roasting)

Salt and pepper, to taste

Optional toppings: sour cream, chopped green onions, jalapeños, diced tomatoes, avocado, cilantro
Instructions

Preheat oven to 400°F (200°C). Toss cubed potatoes with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until golden and fork-tender.

Cook the ground beef in a skillet over medium heat until browned and cooked through. Drain excess fat.

Stir in taco seasoning and ½ cup water. Simmer for 3–5 minutes until thickened.

Combine and bake: In a large baking dish, layer roasted potatoes and taco beef. Top evenly with shredded cheese.

Return to oven and bake for 10 minutes, or until cheese is melted and bubbly.
