Description

Cheesy Taco Potatoes are a bold, satisfying mashup of taco night and comfort food—featuring seasoned ground beef over fluffy baked potatoes, smothered in melty cheese. This family-friendly dish is easy to make and endlessly customizable with your favorite taco toppings!


Ingredients

  • 1 pound lean ground beef

  • 4 to 6 medium Russet potatoes

  • 1 packet (1 oz) taco seasoning

  • 1/2 cup water

  • Optional toppings: shredded cheese, sour cream, salsa, green onions, jalapeños


Instructions

  • Preheat oven to 400°F (200°C). Scrub potatoes and pierce with a fork. Bake for 45–60 minutes or until tender.

  • Meanwhile, in a large skillet over medium heat, cook ground beef until browned and fully cooked. Drain excess fat.

  • Stir in taco seasoning and water. Simmer for 5 minutes until thickened.

  • Once potatoes are done, let cool slightly, then cut a slit down the center of each and fluff the insides with a fork.

  • Spoon seasoned beef over each potato.

  • Top with shredded cheese and other desired toppings. Serve warm.

Notes

  • For faster prep, microwave potatoes for 8–10 minutes instead of baking.

  • Great way to use leftover taco meat.

  • Add black beans or corn for extra texture and flavor.
