Cheesy Taco Potatoes are a bold, satisfying mashup of taco night and comfort food—featuring seasoned ground beef over fluffy baked potatoes, smothered in melty cheese. This family-friendly dish is easy to make and endlessly customizable with your favorite taco toppings!
Ingredients

1 pound lean ground beef

4 to 6 medium Russet potatoes

1 packet (1 oz) taco seasoning

1/2 cup water

Optional toppings: shredded cheese, sour cream, salsa, green onions, jalapeños
Instructions

Preheat oven to 400°F (200°C). Scrub potatoes and pierce with a fork. Bake for 45–60 minutes or until tender.

Meanwhile, in a large skillet over medium heat, cook ground beef until browned and fully cooked. Drain excess fat.

Stir in taco seasoning and water. Simmer for 5 minutes until thickened.

Once potatoes are done, let cool slightly, then cut a slit down the center of each and fluff the insides with a fork.

Spoon seasoned beef over each potato.

Top with shredded cheese and other desired toppings. Serve warm.
