Ingredients

For the Brownies:

  • 1 3/4 cups all-purpose flour

  • 1/3 cup good quality cocoa powder

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1/4 tsp baking soda

  • 3/4 cup butter

  • 2 cups packed brown sugar

  • 1 oz unsweetened baker’s chocolate, melted (1 square)

  • 2 large eggs

  • 3 tsp vanilla extract

  • 1 cup fresh cherries, chopped into quarters (or use frozen or maraschino cherries)

For the Cherry Cream Cheese Frosting:

  • 1/4 cup cream cheese

  • 1/4 cup butter

  • 1 tsp vanilla extract

  • 2 1/2 cups powdered sugar

  • 1 tbsp milk (adjust for spreadable consistency)

  • 1/3 cup fresh cherries, chopped


Instructions

  • Prepare the Brownies:
    Preheat oven to 350°F (175°C), or 325°F for glass pans.
    Grease or line a 9×9-inch pan with parchment paper.
    In a medium bowl, sift together flour, cocoa, baking powder, salt, and baking soda.
    In a saucepan, melt butter over low heat and remove from heat. Stir in brown sugar, melted chocolate, eggs, and vanilla. Mix well until sugar is dissolved—test by rubbing a bit between your fingers.
    Gradually mix in dry ingredients. Fold in chopped cherries.
    Pour batter into prepared pan and spread evenly. Bake for 35–40 minutes.
    Let cool completely in the pan.

  • Make the Frosting:
    In a bowl, beat cream cheese, butter, and vanilla until creamy.
    Gradually add powdered sugar and mix until fluffy.
    Add milk as needed for a spreadable consistency. Fold in chopped cherries.
    Spread frosting over cooled brownies.

  • Serve:
    Slice into 24 squares or bars and enjoy!

Notes

For extra richness, add 1/2 cup chocolate chips to the batter.

If using frozen cherries, thaw and pat dry before chopping.

These brownies can be stored in the fridge for up to 5 days.
