Ingredients

1 lb chicken tenders

2 tbsp olive oil

Salt and black pepper, to taste

1 tsp Italian seasoning

4 cloves garlic, minced

1 cup long-grain white rice

2 1/2 cups chicken broth

1/2 cup grated Parmesan cheese

1/4 cup heavy cream (optional, for extra creaminess)

2 tbsp chopped fresh parsley (optional)
Instructions

Season chicken tenders with salt, pepper, and Italian seasoning.

In a large skillet, heat olive oil over medium-high heat. Add chicken and sear 3–4 minutes per side until golden and cooked through. Remove and set aside.

In the same skillet, lower heat to medium and add garlic. Sauté for 30 seconds.

Add rice and stir to toast for 1–2 minutes.

Pour in chicken broth, bring to a boil, then reduce to a simmer. Cover and cook for 15–18 minutes, until rice is tender and liquid is absorbed.

Stir in Parmesan and cream (if using) until creamy. Add chicken back on top and warm through.
