Ingredients

→ For the Chicken:

  • 1 pound boneless, skinless chicken breasts, sliced into thin strips

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • 1 tablespoon lemon juice

  • 1 teaspoon Italian seasoning

  • 1/4 teaspoon crushed red pepper flakes (optional)

  • 2 tablespoons butter

  • Fresh parsley, chopped (for garnish)

→ For the Garlic Parmesan Rice:

 

  • 1 tablespoon butter

  • 1 cup long grain white rice

  • 2 1/4 cups chicken broth

  • 1/2 teaspoon garlic powder (or 1 minced clove sautéed in butter)

  • 1/2 cup grated Parmesan cheese

  • Salt and pepper to taste


Instructions

Step 1: Cook the Garlic Parmesan Rice

  1. In a medium saucepan, melt 1 tablespoon butter.

  2. Add rice and sauté for 1–2 minutes until lightly toasted.

  3. Pour in chicken broth and garlic powder. Bring to a boil, then reduce heat, cover, and simmer for 15–18 minutes until rice is tender and broth is absorbed.

  4. Stir in Parmesan cheese, and season with salt and pepper. Set aside and keep warm.

Step 2: Cook the Chicken Scampi
5. Season chicken strips with salt and pepper.
6. In a large skillet, heat olive oil over medium-high heat. Add chicken and sauté for 5–6 minutes until golden and cooked through.
7. Add minced garlic, Italian seasoning, and red pepper flakes. Cook for 1 minute.
8. Stir in lemon juice and butter; cook for 2 more minutes until chicken is glossy and flavorful.

 

Step 3: Serve
9. Spoon the garlic Parmesan rice onto plates and top with chicken scampi.
10. Garnish with fresh parsley and serve hot.

  • Add a splash of white wine to the chicken for added depth.
