Description

These Chocolate Caramel Cookies are rich, chewy, and stuffed with gooey caramel centers—perfect for chocolate lovers. With a deep cocoa flavor and melty caramel in every bite, they’re a decadent dessert that pairs beautifully with milk or coffee.


Ingredients

  • 1 cup unsalted butter, softened

  • 1 cup brown sugar, packed

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 2 1/4 cups all-purpose flour

  • 1/2 cup unsweetened cocoa powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 20-24 soft caramel candies (unwrapped)

  • 1 cup semi-sweet chocolate chips (optional)

  • Sea salt flakes for topping (optional)


Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Make the dough:

    • Cream butter, brown sugar, and granulated sugar until fluffy.

    • Add eggs and vanilla, mix until smooth.

  3. Add dry ingredients:

    • Mix in flour, cocoa powder, baking soda, and salt until a soft dough forms.

    • Fold in chocolate chips, if using.

  4. Shape the cookies:

    • Scoop 1 ½ tablespoons of dough, flatten slightly.

    • Place a caramel candy in the center, wrap dough around it, and roll into a ball.

  5. Bake:

    • Place dough balls on prepared sheet, spaced 2 inches apart.

    • Bake for 10–12 minutes until edges are set.

  6. Cool:

    • Let cool 5 minutes on the sheet, then transfer to a wire rack.

    • Sprinkle with sea salt if desired.

Notes

  • Use soft caramels for best melt-in-the-middle texture.

  • For a crunchier cookie, bake an extra 1–2 minutes.
