Description

These Cinnamon Sugar French Toast Muffins combine the cozy flavor of classic French toast with the convenience of a muffin. Rolled in melted butter and cinnamon sugar, these breakfast treats are soft, sweet, and totally irresistible.


Ingredients

For the Muffins:

  • 2 cups all-purpose flour

  • 1 cup granulated sugar

  • 1 tbsp baking powder

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 cup milk

  • 1/4 cup butter, melted

  • 1/4 cup vegetable oil

  • 2 large eggs

  • 1 tsp vanilla extract

For the Cinnamon Sugar Topping:

 

  • 1/4 cup granulated sugar

  • 1 tsp ground cinnamon

  • 1/4 cup butter, melted


Instructions

  • Preheat Oven:

    • Preheat to 350°F (175°C). Line or grease a 12-cup muffin tin.

  • Prepare the Muffin Batter:

    • In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon.

    • In a separate bowl, whisk milk, melted butter, oil, eggs, and vanilla until smooth.

  • Combine Wet and Dry Ingredients:

    • Gradually stir the wet ingredients into the dry ingredients just until combined. Batter should remain a little lumpy.

  • Fill Muffin Tin:

    • Spoon batter evenly into muffin cups, filling each about 2/3 full.

  • Bake:

    • Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pan for 5 minutes.

  • Cinnamon Sugar Topping:

    • Mix cinnamon and sugar in a bowl.

    • While muffins are still warm, brush tops with melted butter, then roll in the cinnamon sugar mixture until coated.

 

  • Serve:

    • Enjoy warm or at room temperature. Store leftovers in an airtight container for up to 3 days.

  • For extra indulgence, dip the entire muffin top in butter and sugar mix.
