Ingredients

  • 1 can whole kernel corn, drained

  • 2 eggs

  • Salt & pepper to taste

  • 1/2 cup all-purpose flour

  • 1 tsp baking powder

  • 1/2 cup shredded cheese

  • 1 pat butter

  • 2 tbsp oil

  • 1/4 cup chopped parsley


Instructions

  • In a large bowl, beat eggs with salt and pepper.

  • Add flour and baking powder, whisking until smooth.

  • Stir in drained corn, shredded cheese, and parsley until well combined.

  • Heat butter and oil in a frying pan over medium heat until bubbly.

  • Drop spoonfuls of the corn mixture into the pan.

  • Cook until golden on one side, then flip and cook the other side.

  • Transfer to paper towels to drain excess oil.
