For the pork chops:

4 bone-in pork chops (about 1 inch thick)

1 cup buttermilk

For the bacon gravy:

4 slices bacon

2 tablespoons all-purpose flour

1 1/2 cups milk

Instructions

Marinate pork chops: Place pork chops in a shallow dish and cover with buttermilk. Let sit for at least 30 minutes (or overnight for more flavor).

Prepare flour mixture: In a separate bowl, mix flour, salt, and black pepper. Dredge marinated pork chops in the flour mixture, pressing to coat well.

Fry pork chops: Heat oil in a large skillet over medium-high heat. Fry pork chops for about 4–5 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.

Cook bacon: In the same skillet, cook bacon until crispy. Remove and crumble; reserve 2 tablespoons of drippings.

Make gravy: Add flour to the bacon drippings and whisk until golden brown. Slowly whisk in milk and stir until thickened. Season with salt and pepper. Stir in crumbled bacon.

Serve: Pour the warm bacon gravy over the pork chops and serve immediately.
