Ingredients

For the pork chops:

  • 4 bone-in pork chops (about 1 inch thick)

  • 1 cup buttermilk

  • 1 cup all-purpose flour

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

For the bacon gravy:

  • 4 slices bacon

  • 2 tablespoons all-purpose flour

  • 1 1/2 cups milk

  • Salt and pepper to taste


Instructions

  • Marinate pork chops: Place pork chops in a shallow dish and cover with buttermilk. Let sit for at least 30 minutes (or overnight for more flavor).

  • Prepare flour mixture: In a separate bowl, mix flour, salt, and black pepper. Dredge marinated pork chops in the flour mixture, pressing to coat well.

  • Fry pork chops: Heat oil in a large skillet over medium-high heat. Fry pork chops for about 4–5 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined plate.

  • Cook bacon: In the same skillet, cook bacon until crispy. Remove and crumble; reserve 2 tablespoons of drippings.

  • Make gravy: Add flour to the bacon drippings and whisk until golden brown. Slowly whisk in milk and stir until thickened. Season with salt and pepper. Stir in crumbled bacon.

  • Serve: Pour the warm bacon gravy over the pork chops and serve immediately.

Notes

  • For extra-crispy chops, double-dip in buttermilk and flour.

  • Serve with mashed potatoes or biscuits to soak up the gravy.

  • Substitute with boneless chops if preferred; adjust cooking time accordingly.
