Description

This Creamy Beef and Shells recipe is a quick and comforting one-pot dinner packed with tender pasta, seasoned ground beef, melty cheddar, and a creamy, savory sauce. Ready in just 20 minutes, it’s perfect for busy weeknights or cozy family meals, and always a hit with kids and adults alike!


Ingredients

  • 3 cups medium pasta shells, uncooked

  • 1 lb ground beef

  • 1 medium red bell pepper, diced

  • 1/2 large onion, diced

  • 1 tsp garlic, minced

  • 1 tbsp Italian seasoning

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 3 tbsp Land O Lakes® Butter with Olive Oil & Sea Salt (or regular butter)

  • 1/4 cup all-purpose flour

  • 2 cups beef broth

  • 1/2 cup sour cream

  • 1 cup mild cheddar cheese, shredded

  • 2 tbsp fresh parsley, chopped


Instructions

  • Boil a large pot of salted water and cook pasta shells according to package directions until tender. Drain and set aside.

  • In a large skillet over medium heat, brown the ground beef with red bell pepper and onion until fully cooked. Drain excess fat.

  • Add garlic, Italian seasoning, salt, and pepper. Cook until fragrant.

  • Stir in butter until melted, then whisk in flour. Cook for 1 minute to form a roux.

  • Gradually stir in beef broth, stirring constantly, until the sauce thickens slightly.

  • Mix in sour cream and shredded cheddar cheese until melted and creamy.

  • Fold in cooked pasta shells and stir until well combined.

  • Garnish with fresh parsley and serve hot.

Notes

Substitute ground turkey or chicken for a lighter version.

Add mushrooms or spinach for extra veggies.

Use sharp cheddar or a cheese blend for bolder flavor.
