1 small onion, diced

3 cloves garlic, minced

8 oz mushrooms, sliced (cremini or white button)

1 tbsp all-purpose flour

1 1/2 cups chicken broth

1 cup heavy cream

1/4 cup sour cream

1 tsp Dijon mustard

Fresh parsley, chopped (for garnish)
Instructions

Cook the Chicken: Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sauté chicken until golden and cooked through, about 5–6 minutes. Remove and set aside.

Sauté Veggies: In the same skillet, melt butter. Add diced onion and garlic; cook for 3–4 minutes until soft. Add mushrooms and sauté until browned and juices are released, about 5 minutes.

Make Sauce: Sprinkle flour over mushroom mixture. Stir for 1 minute, then slowly whisk in chicken broth. Let simmer until slightly thickened, 2–3 minutes.

Creamy Finish: Stir in heavy cream, sour cream, and Dijon mustard. Return chicken to pan and simmer for 5–7 minutes until sauce thickens and chicken is heated through.
