Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces

  • Salt and black pepper, to taste

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 8 oz mushrooms, sliced (cremini or white button)

  • 1 tbsp all-purpose flour

  • 1 1/2 cups chicken broth

  • 1 cup heavy cream

  • 1/4 cup sour cream

  • 1 tsp Dijon mustard

 

  • Fresh parsley, chopped (for garnish)


Instructions

  • Cook the Chicken: Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sauté chicken until golden and cooked through, about 5–6 minutes. Remove and set aside.

  • Sauté Veggies: In the same skillet, melt butter. Add diced onion and garlic; cook for 3–4 minutes until soft. Add mushrooms and sauté until browned and juices are released, about 5 minutes.

  • Make Sauce: Sprinkle flour over mushroom mixture. Stir for 1 minute, then slowly whisk in chicken broth. Let simmer until slightly thickened, 2–3 minutes.

  • Creamy Finish: Stir in heavy cream, sour cream, and Dijon mustard. Return chicken to pan and simmer for 5–7 minutes until sauce thickens and chicken is heated through.

 

  • Serve: Garnish with chopped parsley. Serve warm over mashed potatoes, egg noodles, or rice.

Notes

  • For extra richness, add a splash of white wine when deglazing the pan with chicken broth.

  • Try with boneless chicken thighs for a more tender texture.
