This creamy sausage and potato bake is a comforting, hearty casserole loaded with tender potatoes, savory smoked sausage, melted cheddar cheese, and a creamy mushroom or chicken base. It’s an easy, family-friendly dinner that’s perfect for chilly nights and busy weeknights alike.
Ingredients

1 lb smoked sausage or kielbasa, sliced

4 cups potatoes, peeled and thinly sliced

1 small onion, diced

1 can (10.5 oz) cream of mushroom or cream of chicken soup

3/4 cup sour cream

1 1/2 cups shredded cheddar cheese

Salt and pepper, to taste

Optional: chopped parsley for garnish
Instructions

Preheat oven to 375°F (190°C).

Grease a 9×13-inch baking dish.

Make the Creamy Base:

In a large bowl, combine cream of soup, sour cream, and 1 cup of shredded cheese.

Stir in salt and pepper to taste.

Layer the Bake:

In the prepared dish, layer half of the sliced potatoes, half the sausage, and half the diced onion.

Spoon half the creamy mixture over the top.

Repeat the layers, ending with the remaining creamy mixture.

Top & Bake:

Sprinkle the remaining 1/2 cup cheddar cheese on top.

Cover with foil and bake for 40 minutes.

Remove foil and bake an additional 15–20 minutes until the top is golden and bubbly, and potatoes are tender.

Let cool slightly before serving. Garnish with parsley if desired.
