Description

This creamy sausage and potato bake is a comforting, hearty casserole loaded with tender potatoes, savory smoked sausage, melted cheddar cheese, and a creamy mushroom or chicken base. It’s an easy, family-friendly dinner that’s perfect for chilly nights and busy weeknights alike.


Ingredients

  • 1 lb smoked sausage or kielbasa, sliced

  • 4 cups potatoes, peeled and thinly sliced

  • 1 small onion, diced

  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup

  • 3/4 cup sour cream

  • 1 1/2 cups shredded cheddar cheese

  • Salt and pepper, to taste

 

  • Optional: chopped parsley for garnish


Instructions

  • Preheat oven to 375°F (190°C).

    • Grease a 9×13-inch baking dish.

  • Make the Creamy Base:

    • In a large bowl, combine cream of soup, sour cream, and 1 cup of shredded cheese.

    • Stir in salt and pepper to taste.

  • Layer the Bake:

    • In the prepared dish, layer half of the sliced potatoes, half the sausage, and half the diced onion.

    • Spoon half the creamy mixture over the top.

    • Repeat the layers, ending with the remaining creamy mixture.

  • Top & Bake:

    • Sprinkle the remaining 1/2 cup cheddar cheese on top.

    • Cover with foil and bake for 40 minutes.

    • Remove foil and bake an additional 15–20 minutes until the top is golden and bubbly, and potatoes are tender.

 

  • Serve:

    • Let cool slightly before serving. Garnish with parsley if desired.

Notes

  • Add chopped bell peppers or spinach for extra veggies.

  • Use pre-cooked sausage for faster prep.

 

  • Can be made ahead and refrigerated overnight before baking.
