Description

These moist and flavorful Pumpkin Bars are the ultimate fall dessert! Made with real pumpkin puree and warm spices, then topped with a luscious cream cheese frosting, they’re perfect for holiday gatherings, potlucks, or cozy autumn treats at home. A seasonal classic everyone loves!


Ingredients

For the Bars:

  • 4 large eggs

  • 1 2/3 cups granulated sugar

  • 1 cup vegetable oil

  • 1 can (15 oz) pumpkin puree

  • 2 cups all-purpose flour

  • 2 teaspoons baking powder

  • 2 teaspoons ground cinnamon

  • 1 teaspoon salt

  • 1 teaspoon baking soda

For the Cream Cheese Frosting:

 

  • 1 package (8 oz) cream cheese, softened

  • 1/2 cup butter, softened

  • 2 cups powdered sugar

  • 1 teaspoon vanilla extract


Instructions

  • Preheat Oven:
    Preheat oven to 350°F (175°C). Grease a 15x10x1-inch pan or line with parchment paper.

  • Mix Wet Ingredients:
    In a large bowl, beat eggs, sugar, oil, and pumpkin puree until smooth and well combined.

  • Mix Dry Ingredients:
    In a separate bowl, whisk together flour, baking powder, cinnamon, salt, and baking soda.

  • Combine & Bake:
    Gradually stir dry ingredients into pumpkin mixture. Spread evenly in prepared pan.
    Bake for 25–30 minutes or until a toothpick comes out clean. Let cool completely in the pan.

  • Make Frosting:
    In a medium bowl, beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla. Beat until smooth.

 

  • Frost & Serve:
    Spread frosting over cooled bars. Slice into 24 squares and serve.

Notes

  • Add chopped pecans or walnuts to the batter for a nutty twist.

  • Store bars in an airtight container in the fridge for up to 5 days.

  • These bars also freeze beautifully—just thaw before frosting!
