Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

3-4 medium potatoes, peeled and diced

2 carrots, sliced

1 green bell pepper, chopped

1 can (14.5 oz) diced tomatoes, undrained

1 cup shredded cheddar cheese

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

Optional: chopped green onions for garnish
Instructions

In a skillet over medium heat, brown the ground beef with diced onion and garlic until fully cooked. Drain excess grease.

Add cooked beef mixture to the bottom of the crockpot.

Layer potatoes, carrots, and green bell pepper over the beef.

Pour undrained diced tomatoes over the top.

Sprinkle with salt, pepper, and paprika.

Cover and cook on low for 6–8 hours or high for 3–4 hours, until vegetables are tender.

In the last 15–30 minutes of cooking, sprinkle shredded cheddar cheese on top and allow it to melt.
