Cheesecake Filling:

Cherry Filling:

1 cup fresh cherries, pitted and chopped

For Frying & Assembly:

1 package of spring roll wrappers or puff pastry

Vegetable oil (for deep frying)

Instructions
Make Cherry Filling:
In a saucepan, combine cherries, sugar, cornstarch, water, and lemon juice. Cook over medium heat, stirring until thickened (5–7 minutes). Set aside to cool.
Make Cheesecake Filling:
In a bowl, beat cream cheese, sugar, vanilla, egg, and flour until smooth.
Assemble:
Lay out spring roll wrappers or puff pastry squares. Add a spoonful of cheesecake filling and a teaspoon of cherry filling to the center. Fold and seal the edges tightly to form a packet.
Fry:
Heat oil to 350°F (175°C). Fry packets in batches for 3–4 minutes, or until golden and crispy. Drain on paper towels.
Serve:
Dust with powdered sugar and serve immediately for maximum crispiness.
