Description

These Double-Stuffed Buffalo Chicken Jalapeño Poppers are the ultimate spicy snack! Packed with shredded chicken, Buffalo sauce, and melty cheese, then topped with buttery panko for crunch – they’re perfect for parties, game day, or anytime you want a bold, bite-sized appetizer.

Ingredients

  • 8 large jalapeños, halved lengthwise and deseeded

  • 1 cup cooked shredded chicken

  • 1/4 cup cream cheese, softened

  • 1/4 cup shredded cheddar cheese

  • 1/4 cup Buffalo sauce

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon black pepper

  • 1/2 cup panko breadcrumbs

  • 2 tablespoons melted butter

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • In a bowl, mix shredded chicken, cream cheese, cheddar cheese, Buffalo sauce, garlic powder, and black pepper until well combined.

  • Spoon or pipe the filling generously into each jalapeño half.

  • In a small bowl, mix panko breadcrumbs with melted butter.

  • Sprinkle the buttery panko mixture on top of each stuffed jalapeño.

  • Bake for 18–20 minutes, or until jalapeños are tender and tops are golden and crispy.

  • Let cool slightly before serving. Optional: serve with ranch or blue cheese dressing for dipping.

Notes

For extra heat, leave some seeds in the jalapeños or use hot sauce in the filling.

Make ahead and bake just before serving.
