1 pound chicken breasts, cooked and shredded

1 packet (1 oz) fajita seasoning mix

1 bell pepper (any color), sliced

1 onion, sliced

1 cup cooked rice

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup sour cream

1/2 cup salsa

Instructions

Preheat Oven: Set oven to 375°F (190°C) and grease a 9×13 inch baking dish.

Sauté Veggies: Heat olive oil in a skillet over medium heat. Sauté sliced bell pepper and onion until tender (about 5 minutes).

Combine Ingredients: In a large bowl, mix shredded chicken, cooked rice, fajita seasoning, sour cream, salsa, sautéed veggies, and half of the shredded cheeses.

Assemble Casserole: Spread the mixture evenly in the prepared baking dish. Top with remaining cheese.
