- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp chili powder (optional, for heat)
For the Garlic Butter Honey BBQ Sauce:
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 2 tbsp honey
- 1/2 cup BBQ sauce (your favorite brand)
- 1 tbsp lemon juice
- 1/2 tsp smoked paprika
For the Tacos:
- 8 small flour or corn tortillas
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or queso fresco)
- 1/2 cup shredded lettuce or cabbage
- 1/4 cup red onion, diced
- 1 avocado, sliced (optional)
- Fresh cilantro, chopped
- Lime wedges for serving
Instructions
. Cook the Chicken:
- In a bowl, toss the chicken with olive oil, paprika, garlic powder, onion powder, chili powder, salt, and pepper until fully coated.
- Heat a skillet over medium-high heat and cook the chicken for 4-5 minutes per side until golden brown and fully cooked (internal temperature 165°F / 75°C).
- Remove from heat and let rest for 5 minutes, then slice or shred.
2. Make the Garlic Butter Honey BBQ Sauce:
- In the same skillet, melt butter over medium heat and sauté the garlic for 30 seconds until fragrant.
- Stir in honey, BBQ sauce, lemon juice, and smoked paprika. Simmer for 2 minutes until slightly thickened.
- Add the cooked chicken back into the skillet and toss to coat in the sauce.
3. Assemble the Tacos:
- Warm the tortillas in a dry skillet or microwave.
- Fill each tortilla with the garlic butter honey BBQ chicken.
- Top with shredded cheese, lettuce or cabbage, red onion, avocado slices, and fresh cilantro.
- Serve with lime wedges for extra zest!
