Description

This Garlic Mushrooms Cauliflower Skillet is a simple, savory side dish bursting with umami and roasted garlic flavor. Quick to make in one pan, it’s low-carb, vegan, and a perfect healthy addition to any meal!

Ingredients

  • 1 medium head of cauliflower, cut into florets

  • 8 oz (about 225g) mushrooms, sliced

  • 4 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 teaspoon salt (adjust to taste)

  • Optional: black pepper, chopped parsley, red pepper flakes

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add cauliflower florets and cook for 5–6 minutes, stirring occasionally until they start to soften and brown slightly.

  3. Add sliced mushrooms and continue cooking for another 5–7 minutes until mushrooms are tender and cauliflower is golden.

  4. Stir in minced garlic, salt, and optional seasonings. Cook for another 1–2 minutes until garlic is fragrant.

  5. Remove from heat and garnish with fresh parsley or chili flakes if desired. Serve warm.

Notes

  • Add a splash of lemon juice or balsamic vinegar for a zesty finish.

  • Works well as a side for grilled meats or tossed into a grain bowl.

  • For extra flavor, use garlic-infused olive oil.
