Ingredients

  • 1.5 lbs ground chicken

  • 1/2 cup breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup shredded mozzarella cheese (plus extra for topping)

  • 3 cloves garlic, minced

  • 1 large egg

  • 1/4 cup milk

  • 1 tbsp fresh parsley, chopped

  • 1 tsp Italian seasoning

  • Salt and black pepper, to taste

 

  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat Oven: Heat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

  2. Mix Ingredients: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, egg, milk, parsley, Italian seasoning, salt, and pepper. Mix gently until just combined.

  3. Form and Bake: Shape into a loaf on the baking sheet or press into a loaf pan. Bake for 35–40 minutes until cooked through.

  4. Add Cheese Topping: Sprinkle additional mozzarella on top, return to the oven, and bake for 5–7 more minutes until melted and bubbly.

  5. Rest and Serve: Let rest for 5 minutes before slicing. Garnish with chopped parsley.

Notes

  • For extra moisture, add 2 tablespoons of sour cream or Greek yogurt to the mix.

  • Great paired with mashed potatoes, roasted veggies, or a crisp green salad.
