Description

This Glazed Apple Cinnamon Oatmeal Bread is a moist, spiced quick bread bursting with warm apple flavor and topped with a sweet vanilla glaze. Made with Greek yogurt, oats, and applesauce, it’s a cozy, wholesome treat for breakfast, brunch, or snack time.


Ingredients

For the Bread:

  • 2 cups all-purpose flour

  • 1 cup old-fashioned oats

  • 1/4 tsp salt

  • 2 tsp cinnamon

  • 2 tsp baking powder

  • 1 cup granulated sugar

  • 3/4 cup vegetable oil

  • 2 eggs, beaten

  • 1/2 cup plain nonfat Greek yogurt

  • 1 cup applesauce (preferably unsweetened or homemade)

For the Glaze:

 

  • 1/2 cup powdered sugar

  • 1 tbsp milk or cream

  • 1/4 tsp vanilla extract


Instructions

  • Preheat Oven:

    • Preheat to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.

  • Mix Dry Ingredients:

    • In a large bowl, whisk together flour, oats, salt, cinnamon, baking powder, and sugar.

  • Combine Wet Ingredients:

    • In a separate bowl, whisk oil, eggs, Greek yogurt, and applesauce until smooth.

  • Combine Wet and Dry:

    • Fold wet mixture into dry ingredients until just combined. Avoid overmixing.

  • Bake:

    • Pour batter into prepared loaf pan. Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean. Cover loosely with foil if browning too fast.

  • Make the Glaze:

    • In a small bowl, whisk powdered sugar, milk or cream, and vanilla extract until smooth.

  • Glaze the Bread:

    • Cool the bread for 10 minutes in the pan, then transfer to a wire rack. Drizzle glaze while still warm.

 

  • Serve:

    • Slice and enjoy warm or at room temperature.
