Ingredients

Cake:

  • 2 ripe bananas, mashed

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup buttermilk

  • 1 cup chopped walnuts

Frosting:

  • 1 cup heavy cream

  • 2 tablespoons powdered sugar

  • 1 teaspoon vanilla extract

  • 1/2 cup cream cheese, softened

Garnish (optional):

  • Additional chopped walnuts

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  • In a medium bowl, whisk flour, baking powder, baking soda, and salt.

  • In a large bowl, cream butter and sugar until light and fluffy.

  • Beat in eggs one at a time, then mix in vanilla extract.

  • Add mashed bananas and mix until smooth.

  • Alternate adding dry ingredients and buttermilk to the batter, mixing until just combined.

  • Fold in chopped walnuts.

  • Pour batter into the prepared cake pan and smooth the top.

  • Bake for 30–35 minutes or until a toothpick comes out clean.

  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • For frosting, whip heavy cream, powdered sugar, and vanilla until soft peaks form. Beat in cream cheese until smooth and creamy.

  • Spread frosting over the cooled cake and garnish with extra chopped walnuts.

Notes

  • Use very ripe bananas for the sweetest flavor.
