1 egg

2 egg yolks

3 Tbsp cold water

2 cups all-purpose flour
Instructions

In a mixing bowl, beat the egg and yolks until light and fluffy.

Add cold water, salt, and flour to the eggs. Mix and knead until the dough is smooth and elastic.

Roll out the dough on a floured surface to about 1/8″ thickness.

Cut into strips using a pizza cutter or sharp knife.

Store in the refrigerator for 2–3 days or freeze for 1–2 months.

To cook, drop noodles into boiling water and cook for 7–9 minutes, or until tender.
