Ingredients

  • 1 egg

  • 2 egg yolks

  • 3 Tbsp cold water

  • 1 tsp salt

  • 2 cups all-purpose flour


Instructions

  • In a mixing bowl, beat the egg and yolks until light and fluffy.

  • Add cold water, salt, and flour to the eggs. Mix and knead until the dough is smooth and elastic.

  • Roll out the dough on a floured surface to about 1/8″ thickness.

  • Cut into strips using a pizza cutter or sharp knife.

  • Store in the refrigerator for 2–3 days or freeze for 1–2 months.

  • To cook, drop noodles into boiling water and cook for 7–9 minutes, or until tender.
