Ingredients

3 cups low-fat or 2% milk

1/2 cup brown sugar

1/4 cup unsweetened cocoa powder

2 tablespoons cornstarch
Instructions

Combine dry ingredients: In a medium saucepan (off heat), whisk together brown sugar, cocoa powder, and cornstarch.

Add milk: Slowly whisk in ½ cup of milk until smooth and lump-free.

Cook the mixture: Turn the heat to medium and gradually whisk in the remaining milk. Cook, stirring constantly, for 7–10 minutes until the mixture thickens like pudding.

Cool: Remove from heat and continue stirring for a minute to prevent lumps. Let cool slightly.

Fill molds: Pour the mixture into a spouted measuring cup and fill popsicle molds. Insert sticks or lids.

Freeze: Freeze for at least 6 hours or overnight until solid.

Unmold: Run warm water over the base of the molds for 10–20 seconds to release fudgesicles easily.

For a creamier texture, use whole milk or add ¼ cup heavy cream.
