Ingredients

  • 2 boneless, skinless chicken breasts

  • Juice and zest of 2 limes

  • 2 tablespoons honey

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • 1 teaspoon chili flakes (optional)

  • 2 cups cooked white or brown rice

  • 1 avocado, diced

  • 1 tablespoon lime juice (for avocado)

  • 2 tablespoons chopped cilantro

  • 1/4 cup diced red onion

  • Sour cream or Greek yogurt, for topping (optional)

Instructions

  • Make the Marinade: In a bowl, whisk together lime juice, zest, honey, olive oil, garlic, salt, pepper, and chili flakes.

  • Marinate Chicken: Place chicken breasts in a resealable bag or bowl and pour marinade over them. Marinate in the fridge for 30 minutes to 2 hours.
