- 6 pork sausages (Irish or bratwurst)
- 1 tbsp olive oil
- 1 onion, sliced
- 3 cloves garlic, minced
- 3 carrots, cut into large chunks
- 3 cups green cabbage, chopped
- 3 cups beef or chicken broth
- 1/2 cup dark beer (optional, for depth of flavor)
- 1 tbsp Worcestershire sauce
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 2 bay leaves

Brown the Sausages:
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the sausages and brown on all sides (about 5 minutes). Remove and set aside.

Sauté the Vegetables:
- In the same pot, add the sliced onion and cook until softened (about 3 minutes).
- Stir in the minced garlic and cook for another 30 seconds.
- Add the carrots and cabbage, stirring occasionally, until the cabbage starts to wilt.

- Pour in the broth and dark beer (if using).
- Stir in Worcestershire sauce, salt, black pepper, thyme, and bay leaves.

- Return the sausages to the pot.
