Lazy Man’s Pie Peach Cobbler is the ultimate easy dessert—featuring a simple pour-and-bake batter that magically rises over sweetened fruit to create a golden, buttery crust. With just a handful of pantry ingredients, this Southern classic is perfect for last-minute gatherings or cozy nights in.


Ingredients

  • 1 stick butter or margarine (1/2 cup)

  • 1 cup milk

  • 1 cup granulated sugar

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • Dash of salt

  • 1 quart sweetened fruit (such as peaches, cherries, or blackberries)


Instructions

  • Preheat oven to 350°F (175°C). Place butter or margarine in a 9×13-inch baking dish and melt in the oven.

  • In a mixing bowl, whisk together flour, sugar, baking powder, and salt.

  • Stir in milk until a smooth batter forms.

  • Once butter is melted, pour the batter evenly over the butter in the baking dish—do not stir.

  • Spoon sweetened fruit (with juices) evenly over the batter. Do not mix.

  • Bake for 45–55 minutes, or until the top is golden brown and cooked through.

  • Let cool slightly before serving. Best enjoyed warm with a scoop of vanilla ice cream.

Notes

  • Use canned fruit, frozen fruit (thawed), or fresh fruit that’s been sweetened to taste.

  • Try with mixed berries or apples for seasonal variations.

  • Batter will rise up and around the fruit during baking—this is what gives it that “pie-like” cobbler effect.
