Description

These Mini Baked Parmesan Potato Rounds are crispy, cheesy, and loaded with flavor — a simple yet irresistible side dish or snack. Made with just a few pantry staples, they bake up golden and crunchy on the outside with a tender inside — perfect for any occasion!


Ingredients

  • 4-5 small to medium Yukon Gold or red potatoes, sliced into 1/4-inch rounds

  • 3 tbsp olive oil

  • 1/2 cup grated Parmesan cheese

  • 1 tsp garlic powder

  • 1/2 tsp paprika

  • Salt and pepper, to taste

 

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.

  2. Prepare Potatoes:
    In a large bowl, toss sliced potatoes with olive oil, garlic powder, paprika, salt, and pepper.

  3. Add Cheese:
    Sprinkle half the Parmesan directly onto the prepared baking sheet. Lay potato rounds in a single layer on top, pressing lightly into the cheese. Sprinkle the remaining Parmesan over the tops of the potatoes.

  4. Bake:
    Bake for 25–30 minutes, or until potatoes are golden and crisp on the edges.

  5. Garnish & Serve:
    Remove from oven, cool slightly, and garnish with chopped parsley if desired. Serve warm.

Notes

  • Use freshly grated Parmesan for better melting and flavor.

  • For extra crispness, broil the potatoes for 1–2 minutes at the end of baking.

  • Great with a side of ranch or sour cream for dipping.
