Description

This One Pot Chicken Parmesan Pasta is a cheesy, saucy, and satisfying weeknight dinner made entirely in one pot! Featuring tender chicken, marinara, Italian seasoning, and plenty of melty cheese, it delivers all the flavor of chicken parm with minimal cleanup—ready in under 30 minutes!


Ingredients

  • 2-3 boneless, skinless chicken breasts, diced

  • 1 tsp Italian seasoning

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • 1 tbsp olive oil

  • 2 1/2 cups marinara sauce

  • 2 cups chicken broth

  • 2 cups uncooked penne or rotini pasta

  • 1 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • Optional: fresh basil or parsley for garnish


Instructions

  • Cook Chicken:

    • In a large pot or deep skillet, heat olive oil over medium heat.

    • Add diced chicken, Italian seasoning, garlic powder, salt, and pepper.

    • Cook until chicken is browned and mostly cooked through.

  • Add Liquids & Pasta:

    • Stir in marinara sauce and chicken broth.

    • Bring to a simmer and stir in uncooked pasta.

  • Simmer:

    • Cover and cook for 10–12 minutes, stirring occasionally, until pasta is tender and chicken is cooked through.

  • Add Cheese:

    • Stir in Parmesan cheese, then top with shredded mozzarella.

    • Cover for 2–3 minutes or until cheese is melted and bubbly.

  • Serve:

    • Garnish with fresh basil or parsley if desired. Serve hot.

Notes

  • Use rotisserie chicken to save time.

  • For added crunch, sprinkle with toasted breadcrumbs before serving.
