Description

Ingredients

  • 1 cup creamy peanut butter

  • 1/2 cup unsalted butter, softened

  • 1 cup brown sugar

  • 1/2 cup granulated sugar

  • 2 eggs

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 12 large marshmallows, halved

  • 1 cup chocolate chips or chocolate squares


Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  • In a large bowl, beat peanut butter, softened butter, brown sugar, and granulated sugar until creamy.

  • Add eggs one at a time, mixing well after each addition.

  • Stir in flour, baking soda, and salt until just combined.

  • Scoop dough into 1-inch balls and place on prepared baking sheets.

  • Bake for 8–10 minutes or until edges are lightly golden.

  • Allow cookies to cool on the sheet for 5 minutes, then transfer to a wire rack.

  • Once cooled, place a piece of chocolate and half a marshmallow on the flat side of one cookie.

  • Microwave or broil briefly until marshmallow is gooey and chocolate is slightly melted.

  • Top with a second cookie to form a sandwich. Repeat with remaining cookies.

Notes

  • For a crispier cookie texture, bake a minute longer.

  • Use a kitchen torch to toast marshmallows for a real s’mores vibe.
