Description

This Ritz cracker chicken casserole is a creamy, cheesy, and ultra-comforting dish that combines tender chicken with a golden, buttery cracker topping. It’s a perfect family dinner or potluck favorite that’s quick, easy, and absolutely delicious!


Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt and pepper, to taste

  • 1 sleeve Ritz crackers, crushed

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup unsalted butter, melted

  • 1 cup sour cream

  • 1 can (10.5 oz) cream of chicken soup

  • 1/2 cup chicken broth

  • Optional: 1 tsp garlic powder, 1/2 tsp paprika, chopped parsley for garnish


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.

  2. Season chicken breasts with salt and pepper, then place them in a saucepan. Add chicken broth and simmer until cooked through (about 15–20 minutes). Let cool slightly, then shred or dice.

  3. In a large bowl, mix sour cream, cream of chicken soup, and optional seasonings. Stir in the shredded chicken.

  4. Spread the chicken mixture into the prepared casserole dish.

  5. In a separate bowl, mix crushed Ritz crackers, Parmesan cheese, and melted butter until evenly coated.

  6. Sprinkle the cracker mixture over the chicken layer.

  7. Bake uncovered for 25–30 minutes, or until the topping is golden and the casserole is bubbling.

  8. Garnish with chopped parsley if desired, and serve hot.

Notes

  • Swap in cooked rotisserie chicken for a shortcut.

  • Add frozen peas or cooked broccoli for a veggie boost.
