Ingredients

  • 1 package (12 oz) cheese tortellini

  • 1 tablespoon olive oil

  • 1 large onion, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 2 cups sliced mushrooms

  • 1 lb thinly sliced beef (ribeye or steak strips)

  • Salt and pepper to taste

  • 1 cup shredded provolone or mozzarella cheese

  • 1/2 cup heavy cream (optional for creamier version)

  • Fresh parsley, chopped (for garnish)


Instructions

Step 1: Cook the Tortellini

  1. Cook tortellini according to package directions. Drain and set aside.

Step 2: Sauté Vegetables
2. In a large skillet, heat olive oil over medium heat.
3. Add onions, bell peppers, and mushrooms. Sauté for 6–8 minutes until softened and caramelized. Remove and set aside.

Step 3: Cook the Beef
4. In the same skillet, add the sliced beef. Season with salt and pepper.
5. Cook for 4–5 minutes until browned and cooked through.

Step 4: Combine and Melt
6. Return sautéed veggies to the skillet with the beef.
7. Add cooked tortellini and toss everything together.
8. Stir in shredded cheese and heavy cream (if using). Mix until melted and creamy.

Step 5: Serve
9. Garnish with chopped parsley and serve hot.
