Description

These no-bake tropical treats are made with crushed pineapple, sweetened coconut, and creamy condensed milk. Soft, chewy, and naturally sweet, they’re perfect for summer snacking, potlucks, or a quick tropical dessert fix!


Ingredients

  • 1 cup crushed pineapple, well drained

  • 1 1/2 cups sweetened shredded coconut (plus extra for rolling)

  • 1/4 cup sweetened condensed milk

  • 1/4 cup powdered sugar

  • 1 tsp vanilla extract

  • Pinch of salt


Instructions

Mix the Base

  • In a large mixing bowl, combine crushed pineapple, coconut, condensed milk, powdered sugar, vanilla extract, and salt.

  • Mix until a sticky, moldable mixture forms.

2. Chill the Mixture

  • Cover and refrigerate for 20–30 minutes to firm up slightly, making it easier to roll.

3. Roll the Balls

  • Using a small cookie scoop or your hands, roll the mixture into 1-inch balls.

  • Roll each ball in extra shredded coconut to coat.

4. Set & Serve

  • Place on a parchment-lined tray and refrigerate for another 20–30 minutes before serving.

  • Enjoy chilled for best texture!
