Description

Ingredients

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1/2 cup crushed pineapple with juice

  • 1/4 cup sour cream (or Greek yogurt)

  • 1 teaspoon vanilla extract

  • Optional: powdered sugar or cream cheese glaze for topping


Instructions

Preheat your oven to 350°F (175°C). Grease and flour an 8×8-inch or 9×9-inch baking pan.

In a medium bowl, whisk together flour, baking powder, and salt.

In a large mixing bowl, cream the softened butter and sugar until light and fluffy.

Beat in the eggs one at a time, then mix in the vanilla.

Add the crushed pineapple with juice and sour cream; stir until combined.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined—do not overmix.

Pour the batter into the prepared pan and smooth the top.

Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

Let cool in the pan, then top with a dusting of powdered sugar or a drizzle of cream cheese glaze, if desired.

Notes
