Description

Start your day right with these Sausage Muffins with Bisquick – a savory, easy-to-make breakfast packed with sausage, cheese, and fluffy Bisquick goodness. Perfect for meal prep, brunches, or on-the-go mornings!

Ingredients

  • 1 lb ground breakfast sausage, cooked and crumbled

  • 2 cups shredded cheddar cheese

  • 1 1/2 cups Bisquick baking mix

  • 4 large eggs

  • 1/2 cup milk

  • Optional add-ins: diced bell peppers, chopped spinach, green onions, or your favorite herbs

Instructions

  1. Preheat oven to 375°F (190°C). Grease or line a muffin tin.

  2. In a large bowl, combine the cooked sausage and shredded cheese.

  3. In another bowl, whisk together the eggs and milk until smooth.

  4. Add Bisquick mix to the egg mixture, stirring until just combined.

  5. Fold in the sausage and cheese mixture (and any optional add-ins).

  6. Spoon the mixture evenly into the prepared muffin cups, filling each about ¾ full.

  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.

  8. Let cool for a few minutes before removing from the muffin tin. Serve warm or store for later!

Notes

  • These muffins freeze well—just reheat in the microwave or oven.

  • Swap in turkey sausage or plant-based sausage for a lighter or vegetarian option.

  • Add a pinch of cayenne or hot sauce for a spicy kick!
