Description

These Scored Potatoes are the ultimate crispy and flavorful side dish! With a simple scoring technique and bold seasoning, they roast up beautifully with golden edges and tender centers—perfect for any meal, from weeknight dinners to holiday feasts.


Ingredients

  • 4 medium-sized potatoes (russet or Yukon gold)

  • 3 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried rosemary

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  • Preheat the Oven: Set your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.

  • Prepare the Potatoes: Wash and dry potatoes thoroughly. Using a sharp knife, make shallow slits (about ¼ inch deep) across the top of each potato, spaced about ½ inch apart—don’t cut all the way through.

  • Season the Potatoes: In a small bowl, combine olive oil, garlic powder, smoked paprika, thyme, rosemary, salt, and black pepper. Brush this seasoning mix generously over the potatoes, making sure it gets into the slits.

  • Roast: Arrange the potatoes on the baking sheet. Roast for 40–45 minutes, flipping halfway through, until the edges are crisp and the centers are tender.

  • Garnish & Serve: Remove from the oven, let cool slightly, then garnish with fresh parsley if using. Serve warm

Notes

  • Use a spoon as a guide to avoid cutting through the bottom of the potato while scoring.

  • Feel free to add grated Parmesan or shredded cheese on top during the last 5–10 minutes of roasting for an extra flavor kick.

  • These also work well on the grill wrapped in foil!
