4 medium-sized potatoes (russet or Yukon gold)

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (optional, for garnish)
Instructions

Preheat the Oven: Set your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.

Prepare the Potatoes: Wash and dry potatoes thoroughly. Using a sharp knife, make shallow slits (about ¼ inch deep) across the top of each potato, spaced about ½ inch apart—don’t cut all the way through.

Season the Potatoes: In a small bowl, combine olive oil, garlic powder, smoked paprika, thyme, rosemary, salt, and black pepper. Brush this seasoning mix generously over the potatoes, making sure it gets into the slits.

Roast: Arrange the potatoes on the baking sheet. Roast for 40–45 minutes, flipping halfway through, until the edges are crisp and the centers are tender.

Garnish & Serve: Remove from the oven, let cool slightly, then garnish with fresh parsley if using. Serve warm

Use a spoon as a guide to avoid cutting through the bottom of the potato while scoring.

Feel free to add grated Parmesan or shredded cheese on top during the last 5–10 minutes of roasting for an extra flavor kick.
