Ingredients

  • 1 lb shrimp, peeled and deveined

  • 2 ears corn, cut into thirds

  • 2 medium potatoes, diced

  • 1 smoked sausage, sliced

  • 2 tablespoons olive oil or melted butter

  • 3 cloves garlic, minced (optional)

  • 1 lemon, sliced (optional)

  • 1 tsp Old Bay seasoning or Cajun seasoning

  • Salt and pepper, to taste

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  • Preheat Oven or Grill:

    • Preheat grill to medium-high heat or oven to 400°F (200°C).

  • Prepare Foil Packs:

    • In a large bowl, combine shrimp, corn, potatoes, and sausage.

    • Drizzle with olive oil or melted butter, add garlic, seasoning, salt, and pepper. Toss to coat.

  • Assemble Packets:

    • Cut 4 large sheets of heavy-duty foil. Divide mixture evenly among the foil sheets.

    • Top with lemon slices if using. Fold and seal the edges tightly to create packets.

  • Cook:

    • Grill or bake for 20–25 minutes, until potatoes are tender and shrimp are cooked through.

  • Serve:

    • Carefully open packets (watch for steam). Garnish with fresh parsley and serve warm.

Notes

Add bell peppers or zucchini for extra color and flavor. For extra zing, drizzle with a bit of hot sauce before serving.
