Celebrate St. Patrick’s Day with these Chocolate Covered Mint Patties—a refreshing and festive treat! These homemade peppermint patties have a smooth, creamy mint filling with a touch of green and are dipped in rich chocolate for the perfect bite-sized indulgence.


Ingredients

  • 1/3 cup light corn syrup
  • 1/4 cup butter, softened
  • 1 1/2 teaspoons mint extract (adjust to taste)
  • Pinch of salt
  • Green food coloring (a few drops, as desired)
  • 4 cups powdered sugar, sifted
  • 12 oz chocolate candy coating

Instructions

  1. Make the Mint Filling:

    • In a mixing bowl, beat together the corn syrup, softened butter, mint extract, salt, and a few drops of green food coloring until smooth.
    • Gradually add the sifted powdered sugar, stirring until a dough forms. If the mixture is too sticky, add a little more powdered sugar.
  2. Shape the Patties:

    • Roll the dough into small balls (about ¾-inch in size), then flatten them into discs.
    • Place them on a parchment-lined baking sheet and refrigerate for 30 minutes until firm.
  3. Melt the Chocolate:

    • In a microwave-safe bowl, melt the chocolate candy coating in 30-second intervals, stirring in between, until smooth.
    • Let it cool slightly before dipping the patties.
  4. Coat the Patties:

    • Using a fork or dipping tool, dip each mint patty into the melted chocolate, tapping off the excess.
    • Place them back on the parchment-lined tray and allow the chocolate to set.
  5. Decorate & Serve:

    • If desired, drizzle with extra melted chocolate or sprinkle with festive St. Patrick’s Day sprinkles.
    • Let them set completely at room temperature or in the fridge before serving.

  • For a dairy-free version, use vegan butter and dairy-free chocolate.
