- 1/3 cup light corn syrup
- 1/4 cup butter, softened
- 1 1/2 teaspoons mint extract (adjust to taste)
- Pinch of salt
- Green food coloring (a few drops, as desired)
- 4 cups powdered sugar, sifted
- 12 oz chocolate candy coating
Instructions
-
Make the Mint Filling:
- In a mixing bowl, beat together the corn syrup, softened butter, mint extract, salt, and a few drops of green food coloring until smooth.
- Gradually add the sifted powdered sugar, stirring until a dough forms. If the mixture is too sticky, add a little more powdered sugar.
-
Shape the Patties:
- Roll the dough into small balls (about ¾-inch in size), then flatten them into discs.
- Place them on a parchment-lined baking sheet and refrigerate for 30 minutes until firm.
-
Melt the Chocolate:
- In a microwave-safe bowl, melt the chocolate candy coating in 30-second intervals, stirring in between, until smooth.
- Let it cool slightly before dipping the patties.
-
Coat the Patties:
- Using a fork or dipping tool, dip each mint patty into the melted chocolate, tapping off the excess.
- Place them back on the parchment-lined tray and allow the chocolate to set.
-
Decorate & Serve:
- If desired, drizzle with extra melted chocolate or sprinkle with festive St. Patrick’s Day sprinkles.
- Let them set completely at room temperature or in the fridge before serving.
