Ingredients

For the filling:

  • 8 oz cream cheese, softened

  • 1/4 cup granulated sugar

  • 1/2 tsp vanilla extract

  • 1/2 cup diced fresh strawberries

  • 1 tbsp powdered sugar

For the egg rolls:

  • 10 egg roll wrappers

  • 1 egg (for sealing)

  • Vegetable oil for frying

For the lemon glaze:

  • 1/2 cup powdered sugar

  • 1 tbsp fresh lemon juice

  • 1/2 tsp lemon zest


Instructions

  • Make the cheesecake filling:

    • Beat cream cheese and granulated sugar until smooth.

    • Mix in vanilla, then gently fold in strawberries and powdered sugar.

  • Assemble the egg rolls:

    • Lay a wrapper with a corner facing you.

    • Spoon 2 tbsp of filling in the center.

    • Fold bottom up, sides in, and seal with beaten egg.

    • Repeat for all wrappers.

  • Fry the egg rolls:

    • Heat oil to 350°F (175°C).

    • Fry egg rolls for 2–3 minutes until golden.

    • Drain on paper towels.

  • Make the lemon glaze:

    • Whisk powdered sugar, lemon juice, and zest until smooth.

  • Serve:

    • Drizzle glaze over warm egg rolls. Serve and enjoy
