For the Apple Pie Filling:

2 cups diced apples (Granny Smith or Honeycrisp)

2 tablespoons unsalted butter

1/4 cup brown sugar

1 teaspoon ground cinnamon

1 teaspoon cornstarch dissolved in 1 tablespoon water

8 oz cream cheese, softened

1/4 cup powdered sugar

1 package refrigerated pie dough (or homemade pie crust)

1 egg, beaten (for egg wash)

Instructions

Make the Apple Filling:

In a skillet, melt butter over medium heat. Add apples, brown sugar, cinnamon, and nutmeg.

Cook for 5–7 minutes until apples are soft. Stir in cornstarch slurry and cook until thickened.

Remove from heat and stir in vanilla extract. Let cool.

Prepare Cheesecake Filling:

In a bowl, beat cream cheese and powdered sugar until smooth. Set aside.

Assemble the Pies:

Roll out pie dough and cut into 4–5 inch circles.

Place 1 tsp cheesecake filling and 1–2 tsp apple filling in the center of each.

Fold over, seal edges with a fork, and brush with egg wash.

Fry the Pies:

Heat oil to 350°F (175°C) in a deep skillet or fryer.

Fry pies in batches for 2–3 minutes per side until golden brown.

Drain on paper towels and dust with cinnamon sugar or powdered sugar.

Bake instead of frying at 375°F (190°C) for 20–25 minutes for a lighter version.
